Show 6- Features Sweet Potato Bread Pudding, Apple Tarts, Blueberry Dump Cake, and Ice Cream Pie


SWEET POTATO BREAD PUTTING

12 ( 1 inch thick) slices day-old Bread or French bread
4 eggs
2 cups sugar
3 cups half and half
1 cup mashed sweet potatoes
2 tablespoons vanilla extract
2 tablespoons brown sugar

Preheat oven to 350F.  In a glass dish sprayed with Pam, line the bread.  Beat the eggs and sugar until smooth and add the half and half, sweet potatoes and vanilla.  Make  sure this is blended very well.  Pour the mixture gently in the baking dish and sprinkle the brown sugar on top.  Bake for about 40 minutes and then remove fromt he oven.  If the pudding seems loose, it will firm as it cools

APPLE TARTS

4 Fuji apples, peeled , cored and thinly sliced
4 tablespoons butter
1/2 cup brown sugar
1 teaspoon lemon juice
1 tablespoon ground cinnamon
1 tablespoon honey
4 (4-inch) puff pastry squares

Saute the Fuji apples in the butter, and add the brown sugar, cinnamon, lemon juice and honey.  Reduce until thick and cool to room temperature.  Preheat the oven to 350 F while the apple mixture is cooling.  Spoon the apple mixture into the puff pastry squares and shape any way you like.  Bake until browned, about 15 to 20 minutes

BLUEBERRY DUMP CAKE

1  pkg of frozen blueberries
White or yellow cake Mix- box
Butter- 1 stick
layer blueberrys on bottem of pan, sprinkle cake mix on top and dot with butter, cook at 300 F for approx 35 minutes


ICE CREAM PIE

Chocolate graham crust
any type ice cream

soften ice cream and put into pie curst, re-freeze and  serve




FRUIT COBBLER

1 1/2 cups sugar
2 cups sliced fresh fruit
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1/2 cup butter or margarient, melted

Preheat oven to 300degrees.  Sprinkle 1/2 cup sugar over fruit and set aside.  Mix remaining sugar, flour, baking power,salt and milk:  stir in melted butter.  Pour batter into a nine-inch square baking pan. Spoon sugaredfruit on top of crust mixture.  Bake for one hour or until crust is light brown.  Crust comes to top durning baking.  Fresh peaches or strawberries are good in this cobbler.
